Einkorn Wheat is one of the oldest domesticated types of grain: the ancient grain fed people in the Stone Age as early as 10,000 years ago. Einkorn Wheat comes from wild wheat and, like emmer and spelt, is one of the ancient grains. Einkorn Wheat is considered a healthy alternative to wheat because it contains more proteins (amino acids), lipids (mostly unsaturated fatty acids), fructans and trace elements such as magnesium, copper, manganese, zinc and iron. The ancient grain owes its slightly yellowish color to the high content of beta-carotene, which is converted into vitamin A in the body. Einkorn Wheat is also easy to digest and can therefore be eaten as part of a light diet. People who react sensitively to modern wheat often get along better with this ancient grain.
