Quinoa flakes are made by gently rolling quinoa grains. Quinoa flakes have a fine nutty flavour and are gluten- and lactose-free. Quinoa flakes are particularly suitable as an ingredient for muesli, as a topping on yoghurt and quark dishes or as an addition to porridge.

Quinoa has been known as a cultivated plant in the Andes for around 5000 years. The single-seeded nuts of the plant, which are only 1.3 to 2 millimetres in size, are an important staple food in the high regions there. Quinoa is low in calories and provides easily digestible carbohydrates that only gently raise blood sugar levels. It is well suited to a vegetarian or vegan diet as it is a good source of protein. Quinoa is particularly valuable because it contains all the essential amino acids that are important for humans. Quinoa is a so-called pseudocereal (goosefoot plant, Chenopodium) and is therefore gluten-free and suitable for people with gluten intolerance (coeliac disease).
