Dark nougat is originally from the Torino region in Italy and is made of roasted nuts, mainly hazelnuts, cocoa and sugar. The roasted hazelnuts are finely ground and kneaded with powdered sugar, cocoa butter, chocolate and similar ingredients to a homogeneous compound.
In contrast, white nougat is made of sugar, syrup, whipped egg white and honey and other ingredients, usually specific to the different regions, such as almonds, nuts or fruits. The ingredients are beaten to a foamy compound and then cured to a soft to semi-firm consistency. Famous for white nougat are France, Spain, Portugal, Italy and other countries.
All types of nougat are distinctly melt-in-the-mouth. And for making pralines, creamy cakes, cakes and biscuits, both dark and white nougat are also very popular.
